Arugula Salad with Apples and Pecans
SALAD
ee10 ounces arugula
ee1 bulb fennel, thinly sliced
ee2 apples, cored, quartered and shredded ee1/4 red onion, thinly sliced
ee1/2 cup raw pecans
ee2 Tbsp. pomegranate seeds
DRESSING
ee1⁄4 cup flax seed oil
ee1/2 cup fresh squeezed orange juice
ee1 Tbsp. maple syrup
ee1 Tbsp. poppy seeds
eePinch each of Himalayan sea salt + black pepper

INSTRUCTIONS
Whisk dressing ingredients in a bowl to combine.
Layer a bed of arugula on a platter followed by the fennel, apple and red onion.
Top with pomegranate seeds and pecans.
Pour dressing over salad and serve immediately.
Purple Passion Salad
INSTRUCTIONS
Whisk together the flax seed oil, lemon juice, garlic and ginger in a large salad bowl.
Process the cabbage and carrots using the small grater blade on a food processor and coat with the dressing in the bowl. Chop the remaining
vegetables and herbs and mix together with above ingredients.
Stir in sunflower seeds, coconut, goji berries and raisins. Serve with sliced avocado on the side (optional).
The National Cancer Institute recently reported on over 300 different studies that all showed the same basic information: if consumed in large enough quantities, vegetables and fruits protect against all types of cancers, and raw vegetables have the most powerful anticancer properties of all foods.

ee1⁄2 red pepper, chopped
ee3 green onions, thinly sliced
ee1⁄4 red onion, thinly sliced
ee1⁄2 bunch cilantro, chopped
ee1⁄4 cup fresh parsley, chopped
ee1 Cup goji berries (soaked 2 hours, drained and rinsed) ee1⁄2 Cup raisins (soaked 2 hours, drained and rinsed)
ee1 Cup sunflower seeds (soaked 10 hours, drained and rinsed)
ee1 Cup raw unsweetened shredded coconut
DRESSING
ee1⁄4 Cup flax seed oil
ee1⁄4 Cup fresh squeezed lemon juice ee2 T ginger, minced
ee2 cloves garlic, minced
eeSliced avocado (optional garnish)
