Scrumptious Dairy-Free Holiday Recipes

Our regular column, Eat Love Local, is on hiatus for the Holiday Season, which gives me the perfect opportunity to share with our readers my most delectable diary-free version of holiday favorites! Bon Appetite!
Rich Dairy-Free Turkey Gravy
Producing a rich, flavorful turkey gravy without using cream or butter can be a challenge. I struggled with
my gravy recipe until I hit upon a recipe from America’s Test Kitchen for making gravy when roasting turkey thighs. I tried it with a whole turkey and it worked great! The only change I made is to use less wine, as I think the full two cups recommended in the AKT recipe makes the gravy bitter. The TWO MOST IMPORTANT ingredients are the porcini mushrooms, which add the richness, and high quality chicken and turkey broth. Don’t skip the mushrooms, and use Pacific chicken broth. All other broth is “chicken water” in comparison!
Ingredients
ɶ 3 onions roughly chopped in large chunks
ɶ 3 ribs celery
ɶ 2 -3 carrots
ɶ 6 clove garlic, peeled and smashed with the flat of a knife
ɶ 2 bay leaves
ɶ 6 sprigs fresh thyme, (2-3 teaspoons dried thyme will do)
ɶ 6 sprigs fresh parsley, (may be omitted without harm to
flavor)
ɶ 1/2 oz dried porcini mushrooms, rinsed (very important ingredient. Do not omit)
ɶ 2 cups chicken broth (Pacific is the best)
ɶ 1 cup dry white wine
ɶ 2-4 tablespoons Earth Balance
ɶ 2 -3 tablespoons corn starch
ɶ Canned turkey or chicken broth (Pacific is the best)
Method
1. Before placing turkey in roaster, place celery and carrots in bottom of roaster to form a platform for turkey. Use more vegetables if necessary.
2. Place turkey on vegetable mat, and distribute and pour remaining ingredients in the pan around the turkey.
3. Stuff, prepare, and roast turkey as usual.
4. When turkey is done, lift bird from pan and pour juices into gravy separator.
5. Melt Earth Balance in large skillet. 6. Add flour and stir till smooth.
7. Pour in juice from gravy separator. Do not pour in fat, only juice.
8. Stir until gravy thickens, adding turkey broth or chicken broth to obtain desired gravy consistency. Salt to taste.
