Paper Bag Roast Turkey
One of the drawbacks of making dairy-free roast turkey is that you can’t baste it with butter every few minutes. Using pan drippings only to baste can be frustrating when there aren’t enough pan juices until the end. Also, opening the oven to baste every few minutes causes loss of oven heat, making cooking time highly unpredictable.
Well, paper bags to the rescue!! Choose a large paper grocery
bag that does not have printing on it, or only has printing on
one side. Cut that printed side out, so that the bag has one big side, a bottom, and two narrow sides, to make a tent. Thoroughly grease the paper bag with coconut oil. Do not use vegetable oil. It vaporizes and will fill the room with a smoke that makes everyone in the house cough. (Yes, this is the voice of experience speaking.) Place the bag over the stuffed and prepared turkey that has been placed in a roaster. Tuck the bag all the way down around the turkey, keeping the open end untucked, so you can stick a thermometer in the turkey.
Preheat the oven to 425 or higher, then reduce to 325 and roast turkey 15 minutes per pound for turkeys 12 pounds and under, 10 minutes per pound for turkeys over 12 pounds. Do not baste the turkey. The fats and juices from the turkey fly up onto the paper bag, then drip back down on the turkey. When turkey is done, remove and discard bag. Your turkey will be perfectly golden brown all over, juicy and delicious!
Perfect Dairy-Free Pumpkin Pie
Ingredients
ɶ 2 cups coconut milk, (high quality canned, like Thai Kitchen)
Method ɶ
1 29 oz. can pumpkin
Preheat oven to 350 degrees.
ɶ 4 eggs, lightly beaten
2. Mix all ingredients together in a bowl with an electric ɶ mixer.
3. Pour into 9” prebaked pie shell. Prebaking the crust will keep the bottom from getting soggy. Cover crust edge with foil strips folded over edges, to keep them from burning when you cook the filled pie.
4. Bake for approximately 1 hour. This pie takes a bit longer to cook and firm up then pie made with milk and sugar. Pie is done when knife inserted in center comes
out clean. ɶ
5. Filling will be soft, but will firm as it cools.
1 cup honey
ɶ 2 tablespoons flour cornstarch 1 teaspoon vanilla
ɶ 1 teaspoons cinnamon
ɶ 1/2 teaspoon ground ginger
ɶ 1/2 teaspoon nutmeg
ɶ 1 teaspoon salt
1/4 teaspoon cloves
ɶ 2 pre-baked pie crust (see recipe following page)
